Irish Potato Farls

Traditional Irish Farls

INGREDIENTS

4 medium potatoes, peeled and halved

½ cup plain flour, plus extra for dusting

1 tablespoon melted butter

1 pinch salt

Butter to serve

METHOD

  1. Cover potatoes with water in a pot and bring to a boil over high heat. Simmer on medium-high heat until middle of potatoes are tender, about 20 minutes. Drain, then return potatoes to the pot, and allow to completely dry out over the remaining residual heat.

  2. Mash until smooth.

  3. Place the warm mashed potato in a medium bowl. Stir in the flour, melted butter, and salt. Mix gently until dough forms.

  4. Knead dough lightly on a well-floured surface. The dough will be sticky. Add a little more flour if needed.

  5. Use a floured rolling pin to flatten into a 9-inch circle about 1/2 inch thick. Cut into quarters using a floured knife.

  6. Sautee the farls in melted butter, cook until evenly browned, about 3 minutes on each side. Season with a little salt and serve straight away.

Variations – add to the flour before mixing

  • Finely chopped spring onion

  • Cooked crumbled bacon pieces

  • Garlic, minced or powdered

  • Finely grated parmesan
