Potato Croquettes

INGREDIENTS

Potato mix

2 cups mashed potato – a good way to use leftovers

1 finely diced onion

1 cup grated tasty cheese

1 clove crushed garlic

1 level teaspoon curry powder

Salt & Pepper to taste

Coating mix

1 egg beaten

½ cup plain flour

1 cup finely grated parmesan cheese and 1 cup breadcrumbs mixed together

METHOD

  1. Roll each potato ball lightly in the flour, dip it into the egg, then coat

    in the breadcrumb mix.

  2. Deep fry in sunflower oil until golden.

    Serve with chilli aioli or sour cream and chilli sauce.
